Summer is not the time to run the oven. We live in an old house with hot-water radiators, so the only way we’re getting air conditioning is those window models. And that means more often than not, we just kind of suffer. Fortunately, it really is cooler in the country, especially when you live on the top of a hill. But, my point is really that I don’t want to run the oven. But I do love roasted vegetables, but the great thing is if you have an air-fryer you don’t need to turn on the oven to make these Air-fryer Roasted Everything Mushrooms.

Easy Air-fryer Roasted Everything Mushrooms
Start with 16-24 oz of whole mushrooms. We generally use the baby portobellos, but white mushrooms work too. Wash them. There are lots of theories about washing mushrooms, and I don’t know which one is right. I run them under some cool water and rub them with my fingers then lay them cap side down on a kitchen towel to dry a little.
Trim the hard ends of the stems. I cut them in half or quarters depending on size.
When I know that I am going to be roasting mushrooms, I like to look for small mushrooms, but sometimes they are just not available. I want Roasted Everything Mushrooms to be bite sized, so I cut them accordingly. I also want them all to be about the same size so them cook evenly.
Preheat the air-fryer to 400°F. Put the mushrooms in a bowl or zipper top bag to toss in olive oil, about 2 tablespoons. Then spoon the mushrooms into the basket of the air-fryer. Generously sprinkle Everything Bagel Seasoning on them. Set the timer for 7 minutes. Check for done. Add more time as necessary. Roasted mushrooms will be firm and juicy and delicious. The perfect weeknight gourmet side dish.
Sometimes we make our own Everything Bagel Seasoning and sometimes we buy it. Either way these mushrooms are yum.
Air-Fryer for the Win
When my husband got me the air-fryer a couple of years ago for Christmas, it was the gift I didn’t know I wanted. We probably use it 4-5 times a week. If you are on the fence about an air-fryer, I definitely recommend it. Air-fryers are great for weeknight sides that would take twice as long in the oven and they are perfect for those summer months when turning the oven on just seems like a mistake.

PS. If you don’t have an air-fryer or you want to run the oven, you can make Everything Roasted Mushrooms in a conventional oven. You can bake them at 400° for about 30 minutes.
Air Fryer Roasted Everything Mushrooms
Equipment
- Air Fryer (or conventional oven)
- knife
Ingredients
- 16 oz whole fresh mushrooms
- 2 tablespoons olive oil
- 1/4 cup everything seasoning
Instructions
- Preheat airfryer to 400°F.
- Clean and trim the stems of the mushrooms. Cut larger mushrooms in half or in quarters.
- Toss mushrooms in oil to coat. Spoon into the air fryer basket. Sprinkle with everything seasoning.
- Air fry for 7-10 minutes until mushroom reach desired doneness. Mushrooms should be hot, but still firm.
