Ingredients

salmon fillet

cup
coarse Kosher salt
more or less to taste

tablespoon
dill weed
½
teaspoon
coarse ground pepper
more or less to taste
Instructions
Preheat the smoker to 225°F and let it fill with smoker. We use hickory.
Cut the salmon filet in half to fit your smoker.
Generously sprinkle with salt, pepper and dill week.
Place fillets directly on the rack in your smoker.
Smoke until the salmon reaches 145°F. 45 minutes to an hour.
