Everything Roasted Potatoes

Roasted baby potatoes, onions and garlic sprinkled with salt, pepper, sasame seeds, poppy seeds and mustard seeds.

Ingredients
  

  • 1 medium sweet onion sliced
  • 3-6 cloves garlic sliced
  • 2 pounds baby potatoes
  • 2 tablespoons olive oil
  • 2 tablespoons sesame seeds
  • 1 tablespoon poppy seeds
  • teaspoon mustard seeds
  • 1 teaspoon coarse Kosher salt
  • pepper to taste

Equipment

  • oven or air fryer
  • baking sheet
  • parchment paper
  • knife

Method
 

  1. Preheat oven to 425°F. Prepare a baking sheet with parchment paper.
  2. Slice the onions and garlic, cut the potatoes in half or in quarter.
  3. Toss the veggies in olive oil to coat.
  4. Put potatoes, onions and garlic on the prepared pan. Sprinkle with seeds and salt.
  5. Bake 30-45 minutes until potatoes are fork tender.

Notes

Air Fryer directions:  preheat the air fryer to 400º F.  Cook 15 minutes.  Shake a the basket a couple of times during the cooking.
