- Quarter the onion and pulse it in the food processor until it is the desired texture.
- Add parsley, jalapeno, and garlic. Pulse a few more times.
- Add tomatoes, salt and cumin. Pulse the food processor until the tomatoes are the desired consistency. Do not over process!
Notes
** This makes what I would call mild salsa. To make medium salsa, use half a jalapeno with the seeds. To make hot salsa, use the whole jalapeno.
*** This salsa tastes great straight from the food processor, but gets better as the ingredients have time to meld together.
**** Store in an air tight container in the refrigerator for up to a week.
