Prepare the pan by adding a layer of parchment paper that goes up the sides of the pan.
In a microwave safe dish, add chocolate chips, condensed milk and salt. Microwave at 50% power for 3 minutes. Remove from the microwave and stir until the chocolate has fully melted. Alternatively, melt the chocolate over medium heat in a double boiler.
While the chocolate is melting, rinse and dry the cherries, then chop in the food processor or by hand.
Add grenadine and chopped cherries o the fully melted chocolate. Stir to combine them. Immediately pour into prepared pan and refrigerate 2-3 hours to chill.
Once the fudge has completely cooled, cut into 1 inch pieces and store in an airtight container or zipper bag for up to a week. Freeze for up to three months.
