My mother sometimes makes an appetizer dip Clams Casino which is buttery and bacon-y and garlicky and clammy (in a good way) and it’s served on crackers or bread. I wanted a way to replicate that flavor and make it Whole30. So now we have the perfect appetizer (or meal if you want) that replicates that buttery, clammy garlicky goodness served up in a mushroom cap: Clams Casino Stuffed Mushrooms.

It took us a couple tries to get this recipe right. But each time, my husband was a ready participant in the testing process. It was good to start with but each time it got better.
Preparations
The first step in this is to wash and dry the mushrooms. Preheat the oven to 425°F.
Then remove the stems from the mushroom caps. To do this, I start to cut around the stem and then sort of pry. Sometimes they come out more easily than other times. It’s really just trial and error. Put aside the caps (on a parchment lined baking sheets) and then dice the stem pieces.
Melt the ghee in a large skillet over medium heat (We like this ceramic coated one). While it’s melting, you can dice up an onion and mince garlic. Add these with the mushroom stem pieces to the ghee and allow them to cook until they are soft. About 10 minutes.
Add the drained canned clams and diced prosciutto. Cook another 3-4 minutes until warm. Remove from heat and add almond meal and salt and pepper to taste.
Using a spoon, stuff the mushroom caps with a heaping amount of the clam mixture. Bake them in the 425° oven for 8-10 minutes until they are golden brown on top. Allow them to cool for a few minutes before you eat them or you WILL burn the roof of your mouth. Just saying.
Clams Casino Stuffed Mushrooms Pro Tips
The first few times we made this, I used the biggest white mushrooms I could find. However, after a few goes, we decided that a medium sized mushroom is better because it’s a better mushroom to filling ratio. But obviously that’s up to you and your tastes.
Oh and let’s say you’re not worried about eating Whole30, can you use bread crumbs instead of almond meal? I am sure you can, but the almond meal almost gives an illusion of cheese, so I recommend that you go with it.

Clams Casino Stuffed Mushrooms
Equipment
- cast iron skillet
- oven
- baking sheet
- parchment paper
Ingredients
- 2 tbsp ghee
- 1 small onion finely diced
- 6 cloves garlic minced
- 16 oz whole white mushrooms
- 1 6.5 oz can minced (or chopped) clams drained
- 4 oz diced prosciutto
- ½ cup almond meal
- ¼ cup fresh parsley minced
- ¼ tsp salt
Instructions
- Prepare a baking sheet with parchment paper. Preheat oven to 425°F.
- Wash and dry mushrooms. Remove the stems from the caps and mince the stems.
- Melt ghee in skillet over medium heat. Add mushroom, onion and garlic. Cook until soft. 10 mintues.
- Add clams and prosiutto. Stir to combine and heat through.
- Remove from heat, add almond meal, parsley and salt to taste.
- Use the filling to stuff the mushrooms.
- Bake for 8-10 minutes until the tops are golden brown.
