I think that I may have mentioned once or twice here on the blog that we love our Masterbuilt Electric Smoker (<–affiliate link). We use it at least once a week. Often, we use it more. One of our favorite add-ons for when we are smoking for a meal is smoked nuts. We started out with Seasoned Smoked Almonds because our local supermarket sells “smoked almonds” which are not really smoked, they are simply coated in a smoke flavored seasoning. But then, we discovered smoked cashews. Because cashews are a slightly softer nuts, they REALLY take to being smoked. We’ve simply been using our Seasoned Smoked Almonds recipe. But then, a thought. I have miss everything bagels since we’ve been eating more of a Whole30/Paleo diet. Enter Everything Bagel Smoked Cashews. Delish.
Everything Bagel Smoked Cashews
I adapted my recipe for Everything Bagel Encrusted Venison Steak which evolved into my Everything Bagel Dry Rub. And here is another variation to add to add it as seasoning to the cashews. Easy-peasy.
In a jar or mixing bowl, mix sesame seeds, poppy seeds, minced onion, minced garlic, Kosher salt and coarse ground pepper.
Melt some ghee (or butter if you are not looking for Whole30.)
Add the nuts, everything seasoning and melted ghee to a zipper bag. Shake until your nuts are well coated.
Pour the nuts into a shallow aluminum pan (or two). And smoke at 225°F for 3 hours.
The nuts are excellent when they come right out of the smoker, but after they have cooled, all that smoky goodness really comes out. They should be stored in a tightly covered container.

- 2 pounds raw cashews
- 1 tablespoon sesame seeds
- 1 tablespoon poppy seeds
- 1-1/2 teaspoons dried minced garlic
- 1-1/2 teaspoons dried minced onion
- 2 teaspoons Coarse Kosher Salt
- 1/2 teaspoon coarse ground black pepper
- 2 tablespoons melted ghee or butter

- In a bowl or jar, mix the seeds and garlic, onions, salt and pepper.
- In a large zipper bag, add the nuts, melted ghee and everything mix. Shake until the nuts are well coated both in ghee and everything mix.
- Pour the nuts into a shallow aluminum tray (or two). Set the electric smoker for 225°F. When you have a good head of smoke (not necessarily at temperature), you can add the nuts and smoke for 3 hours.
- Allow the nuts to cool for the true smoky favor. Once cooled, store room temperature in a tightly covered container.

Will this work in the oven? I don’t have a smoker.

I would think that it would, it just wouldn’t have that smoky flavor. The smoker is pretty low heat, so I would think you would like to go with a 300 or 325 degree (F) oven.
