In a bowl or jar, mix the seeds and garlic, onions, salt and pepper.
In a large zipper bag, add the nuts, melted ghee and everything mix. Shake until the nuts are well coated both in ghee and everything mix.
Pour the nuts into a shallow aluminum tray (or two). Set the electric smoker for 225°F. When you have a good head of smoke (not necessarily at temperature), you can add the nuts and smoke for 3 hours.
Allow the nuts to cool for the true smoky favor. Once cooled, store room temperature in a tightly covered container.
