Hello New Year! Hello new and delicious smoked recipes like Smoked Buffalo Almonds. I created this recipe on a whim. We had some Anchor Bar Sauce, so I tossed so almonds in it, put them in a foil tray, sprinkled some salt and we smoked them. The result was A-MAZE-ING.

Of course, that’s the easy way to do it. As it is January, and we are starting the new year with a round of Whole30, I wanted to create a recipe with a homemade Buffalo Sauce.
Smoked Buffalo Almonds
It is super easy to make Buffalo sauce which means that it is super easy to make smoked Buffalo Almonds. Melt some butter or ghee, add some red hot sauce, like Franks, a few spices and you’re done.
Then, throw the nuts in a zipper bag. Pour the Buffalo sauce over them. Shake them to mix. Spread them out in a single-ish layer in a aluminum pan. We usually use the shallower ones and use two. Sprinkle Kosher salt and we add them to the smoker with our dinner.
Smoke them at 245 for 3-5 hours. So simply.
The smokey flavor in the nuts definitely comes out as they sit for a little while–over night seems to be best. Then store them in an air tight container. They will keep for a couple of weeks. That is if they last that long!

- 1/3 cup melted butter or ghee use ghee to make this Whole30
- 1/3 cup red hot sauce like Franks
- 2 tablespoons white vinegar
- 1/4 teaspoon pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon celery salt
- 1/4-1/2 teaspoon cayene pepper optional and to tast
- 2 pounds raw almonds
- Kosher salt to taste

- Melt the butter or ghee.
- Pour the melted butter/ghee to a sauce pan. Add the rest of the ingredients except the almonds and salt. Bring to a boil and then simmer for 2-3 minutes.
- Allow the Buffalo Sauce to cool a little. Then put the almonds into a zipper bag. Add the nuts and mix until they are well coated.
- Place the nuts in an aluminum pan in approximately a single layer. Use two pans in necessary.
- Add the pans of nuts to a smoked filled smoker. Smoke at 245 for 3-5 hours.
I usually make these without the additional cayenne. We are not into crazy amounts of spicy, so the hot sauce is just right for us. If you like your wings fiery, add some cayenne pepper!
