In August, we got a Masterbuilt Electric Smoker. We spent the first two weeks playing around with all sorts of smoked goods which resulted in my post, 10 Foods to Smoke in Your Electric Smoker. Even as the winter has progressed, we continue to use our smoker most weekends. We took advantage of the Christmas break from school to try out a few new ideas. We tried smoking cheese. There is a little trial and error there. I’ve been working on perfecting my not-so-spicy rub and we made the best Seasoned Smoked Almonds.
Seasoned Smoked Almonds
I mentioned to my husband that I purchase a big block of cheese to smoke. Smoking cheese is tricky because you have to heat it while keeping it from melting. In Smoke It Like a Pit Master with your Electric Smoker, Wendy O’Neal suggests using trays of ice. We have been waiting for snow, which we now have plenty of, so let’s smoke some cheese. I love smoked cheese and it came out with a great smoky flavor, but as I said above, trial and error. A few of the edges are not so pretty because maybe they melted a little.
Since the smoker would already be going, my husband prepared some almonds to smoke with the cheese. Best. Smoked. Almonds. Ever. And so simple.
To make these Seasoned Smoked Almonds, my husband melted a tablespoon of butter. In a gallon sized bag, he added a cup of almonds and about 2 tablespoons of Montreal Steak Seasoning. He shook the bag until it was all mixed and then put the nuts in a single layer in an 8×8 disposable pan. He smoked them at 200° for 3 hours. However, the temperature was only that low because he was smoking the cheese. My personal smoke master said that he smokes most foods at 225° and these nuts would be a perfect secondary smoke any time you smoking something for dinner.
Simple Ingredients and Simple Directions
- 1 tablespoon butter, melted
- 1 cup almonds
- 2 tablespoons Montreal Steak Seasoning
Mix all the ingredients. Place in single layer in a foil plan. Smoke for 3 or more hours between 200°-225°. Enjoy.
