  1. Prepare jars by sterilizing them in a hot water bath for 10 minutes (or longer).
  2. Wash and cut the rhubarb and peaches. Add to a heavy bottom stainless steel pot with the sugar. Bring to a hard boil over high heat (reduce heat if necessary to keep it from boiling over). Boil until the temperature reaches 218-222 degrees Fahrenheit on a candy thermometer.
  3. Pour hot jam into hot sterilized jars. Process in a hot water bath for 10 minutes.
