As we continue to move along in Going Whole30, I thought I would share One Week of Whole30 Meals to help you in your meal planning. I also have a new freebie: a revised meal planner/shopping list, a Whole30 Meal Planner and Shopping List.
One Week of Whole30 Meals
When I am meal planning, I like to balance a few make ahead meals with ones that are quick weeknight meals. Most weeks, this works pretty well for us. So, this include Sunday Meal Prep as part of the plan.

Sunday Meal Prep for One Week of Whole30 Meals
Generally, I dedicate part of Saturday to meal planning and then I go grocery shopping Sunday morning before church. This seems to work out pretty well for our family because that leaves the afternoon to do meal prepping. You can read about the benefits of shopping on Sunday morning my meal planning routine here.
This week, I started by boiling a dozen eggs. Sometimes I do a dozen and a half: depends on the week. I ended up needing to make more once Sunshine decided that she could manage hard-boiled eggs for lunch.
Wonton Meatballs
Once I got the eggs going, I got to work making NomNom Paleo’s Wonton Meatballs. I got them mixed, rolled and baked. I reheated them Monday as Michelle Tam recommends by slicing them and putting them in a skillet with ghee. We loved this recipe and next time, I plan to make them ahead and just do them as patties rather than meatballs.
Coconut Chicken Thai Curry
After getting the meatballs into the oven, I started cutting vegetables. Cutting vegetables is something that I do most days. I know that many people do this as part of their Sunday meal prep, however, I don’t like them to get too dried out or the ends to get funny. This Sunday I cut them for both the Coconut Chicken Thai Curry and for Monday and Tuesday dinners and lunches. (Monday is also swim team nights, so it means a quick meal.)
The Coconut Chicken Thai Curry was a good meal for our family. It could easily be a weeknight meal if all the veggies and chicken were cut on Sunday. It was prepared in the wok which I literally had to dust off. But that made it a quick cook for the chicken. Of course, our kids are not going to eat curry. However, I just left chicken and veggies sauceless for them. The recipe calls for the curry paste and coconut milk to be added last. Next time, we would definitely add more curry.
Other Meals
This week, I did less meal prep on Sunday than I often do because we actually had several quick cook dinners on the menu. Smoke Venison Chops only take about half an hour, so it is the perfect meat to put in the electric smoker on a week night. That meal only required us to take the meat out of the freezer.
The salmon is quick to cook too, so it didn’t require having anything made ahead either. Again, I just had to defrost the salmon.
The chicken that I didn’t use in the curry was simply set aside to throw in the crock pot on Thursday for Crock Pot Dill Pickle Chicken. For this recipe to be Whole30, make sure that you read the ingredients on the pickles you are using. Our pickles are homemade, so I know that the ingredients are simply vinegar, salt, dill seeds, garlic and cucumbers. But I looked at pickles in the store this week and the one brand I looked at had dextrose (sugar) in the ingredients.
I made a double batch so that we would have leftovers for dinner on Friday. For the kids, I just reheated the chicken. For the adults, I made it into chicken salad with Paleo mayonnaise and some added pickle juice and cut up dill pickles. I served these in bell pepper boats.
Midweek Make Aheads
On Tuesday evening, after dinner, I made the Sausage, Potato and Egg Bake which we ate for the rest of the week at breakfast. I did that while the kids were cleaning up the table. And, I Wednesday, I made the Whole30 Hearty Tomato Soup that served as our lunches.
