I have been in love with fresh basil since the moment I discovered fresh mozzarella, tomato and basil were a thing. Oh and pesto. Now I have discovered the joy of basil and pineapple in this Pineapple Basil Vinaigrette.
Pineapple Basil Vinaigrette
It is basil season. It is one of the few things that I have growing fresh around the house. Most of the other fresh ingredients I use come from one of three farm stands in my neighbor. (Oh yeah baby, that’s country living. Three really great neighborhood farm stands right there!) So as I was pulling the flowers from my basil plants so they wouldn’t bolt, I was thinking about that amazing zingy smell and what it could go with besides tomatoes. Fruit? Pineapple? We happened to have had some unsweetened pineapple juice, so why not. I whipped up this quick fresh little dressing.
I love to make homemade dressings in mason jars. This only makes about 2/3 cup, so it can easily go into an 8 oz jar. And my favorite lids for something like this are these plastic ones. Unsweetened pineapple juice forms the base of this Whole30 dressing that is just a little sweet and a little tangy . It is perfect for spinach and cukes with bacon. You could also add nuts and raisins to really rock the flavor explosion. Be warned that it is a delicate flavor though, so heavy foods might overshadow it. I’m thinking about trying it out as a marinade for chicken. I’ll let you know how it goes.

- 1/2 cup unsweetened pineapple juice
- 2 tablespoons olive oil
- 1 tablespoon sniped fresh basil
- 2 tablespoons apple cider vinegar
- 1/4 teaspoon Kosher salt
Ingredients

- Mix all of the ingredients thoroughly in a jar with a tight fitting lid.
