Macaroni salad is a staple in the summer. Picnics, parties and just regular dinners all call for a side of some sort of summer salad. This super easy macaroni salad is a slightly different take on an old stand-by. It is just 5 ingredients and there is no guessing involved. A package of Italian dressing seasoning provides all the flavor you need.
My sister-in-law makes a version of mac salad that uses prepared Italian dressing which got me thinking. I’ve seen recipes that use ranch dressing mix. What about Italian dressing mix?
Super Easy Macaroni Salad
My mother makes a killer mac salad, but it’s a lot of work. There are tons of veggies to cut and eggs to boil and several different spices to add. However, this super easy macaroni salad can be made in just about 15 minutes. And, there is no guess work on the add ins.
Five Ingredients
This salad is just mayonnaise, macaroni (I used spirals), celery, onion and an envelop of Italian dressing mix (like Good Seasons).
While the macaroni is cooking, you can cut the celery and onions and mix the dressing package into the mayo. I measured the mayonnaise in a 2 cup glass measuring cup, then added the dressing mix and mixed thoroughly with my favorite flat whisk.
Once the macaroni is drained and cooled slightly, mix everything together. Refrigerate. Done.
My husband loved this salad so much he went back for seconds and thirds.
The flavor definitely got better over time. So if you can make this a day ahead, you’ll be really pleased with the results. However, we did eat it about an hour after it was prepared and it was still yummy.
This would be a great side for Crock Pot Dill Pickle Chicken or Venison Michigan Hot Dogs or ordinary cheeseburgers.

- 1 lb spirals (or other macaroni)
- 1 1/2-2 cups mayonnaise
- 1 envelop Italian dressing mix like Good Seasons
- 1 small onion diced
- 2 stalks celery diced
Ingredients

- Prepare pasta as directed. Drain and rinse with cold water. (Rinsing with cold water stops the cooking process.)
- Mix dressing mix into mayonnaise. If you like a dryer mac salad, use 1-1/2 cups of mayo, if you like it a little more mayonnaisey, go with 2 cups.
- In a large mixing bowl, add dressing (mayonnaise and mix combo), celery and onion to the pasta. Mix well.
- Refrigerate until you're ready to serve.
